Ingredients:
4 cod fillets
Salt and pepper, to taste
2 eggs, beaten
1 cup breadcrumbs
4 tablespoons butter
Juice of 1 lemon
Fresh parsley, chopped
Instructions:
Preheat the oven to 400°F (200°C).
Season the cod fillets with salt and pepper.
Dredge each fillet in flour, then dip in beaten eggs, and coat with breadcrumbs.
In a large skillet, melt the butter over medium heat. Add the cod fillets and cook for 3-4 minutes per side, or until golden brown and crispy.
Transfer the cod fillets to a baking dish. Drizzle with lemon juice.
